Blueberry Buttermilk Muffins



Hi~❤ A Lovely Saturday For Everyone!!
(Wooah~It's been so long?Almost 4years?)
That I had last updated a new blog post.
I been busy with life & baking cute cookies.
Today, Blueberries is very cheap and lovely.
I FHFL~grabbed all the ingredient & bake it.
So~Here's My Blueberry Buttermilk Muffins.
(As usual, I just bake accordingly to my own likes,
it might not be everyone's cup of tea)
But I hope those who will wanna to try out
baking these muffins will love them too^^.


Blueberry Buttermilk Muffins
*yield: 12 standard muffins*

Ingredients:
125g Unsalted Butter ,
(I'm using Golden Churn Butter)
125 Castor sugar,
2 Large eggs,
Cake flour 250g ,
Baking soda 1tsp,
Baking Powder 1tsp,
1tsp vanilla extract,
Blueberries 120g,
(I like more blueberries so I put 150g)
*40ml of lemon juice*,
Buttermilk 160ml ,
(For Buttermilk,I used full cream milk & 1/2 a lemon as substitute ,ratio of 120ml milk
 to 40ml lemon juice.
Add the lemon juice into the milk and stir well, leave it to settle awhile till it forms a light curdle form. Leave aside for use later.)


Instructions:
1)Beat the butter & castor sugar till light & fluffy.  Add in the eggs & vanilla extract and beat in gradually till creamy white.

2)Sift in the cake flour & baking soda & baking powder. Mix well.

3)Add in the Buttermilk first and followed by the blueberries. Lastly add in *40ml of lemon juice* Mix well together.

4)Spoon the batter into the cupcake/muffin baking tray.
 (I'm using the 12's, Just NICE!)
*Fill up each individual muffin cup 3/4 full*


5)Bake in the preheated oven of (180°c) for 20-30mins.(depends on individuals ovens)
